Simple Stove Top Beans
- Sort through 1 pound of dry pinto beans and remove broken beans or tiny rocks.
- Rinse well.
- Cover with several inches of water and soak overnight or 8 to 12 hours.
- Drain and rinse again.
- Add beans to a large pot and cover with fresh water by 1 to 2 inches.
- Bring to a boil, then reduce heat and simmer gently for 1Β½ to 2 hours until soft.
- Add more water if needed during cooking.
- Season near the end of cooking.
